Be sick again, will you!? I'll make Mulligatawny Soup

Still in bed from the stomach virus, Dooley almost missed out on another great meal. Mulligatawny Soup has been on our menu board for several weeks now, and Dooley was overtly reluctant to try this recipe. So Doolia did it again--since Dooley didn't want it and was unavailable to cook, Doolia made this recipe. And don't you know, when it was almost finished cooking, Dooley appeared in the kitchen with a hungry look on his face.

So what is Mulligatawny Soup? It's a vegetable soup made with carrots, celery, onions, potato, and flavor-bursting Indian spices--curry, cumin, ginger and garlic, and cayenne pepper. The recipe in The Complete America's Test Kitchen TV Show Cookbook calls for chicken broth, for which you could substitute a vegetarian broth if you wanted.

The soup is quite simple to make. The final step is to puree the soup. The book recommends you do it in smallish batches in a regular blender. But having had hot soup explode from my blender once upon a time, I'm not in a hurry to repeat that experience so I used my Cuisinart stick blender right in the soup pot to do this.

Finally, you serve the Mulligatawny Soup with a garnish of plain (unsweetened) yogurt and freshly chopped cilantro. And you may serve it over rice to make a complete and hearty dinner.

So my poor, nauseated, sick Dooley only managed to eat 2 big bowls of this soup that he was so reluctant to try. I hope he learns to be more adventurous in the future. And, of course, that he feels better soon!
