Exotic Cooking -- Tandoori Chicken

In the movie Julie and Julia, Julie is learning to "Master the Art of French Cooking," cooking her way through Julia Childs' book of the same name. In our project, Dooley and Doolia are cooking our way through this book:
The Complete America's Test Kitchen TV Show Cookbook. French cooking is sublime, but so is the flavor palette from other cultures.

Tonight Doolia cooked Indian foods: Tandoori Chicken, Rice Pilaf, Spiced Onion Relish, and Yogurt Sauce. Dooley was coming home late, so Doolia agreed to prepare the meal on her own.

The Onion Relish and the Yogurt Sauce were quick and easy, involving no actual cooking. Just chopping, measuring, and stirring ingredients together.

The Tandoori Chicken was another story altogether. I had bought split chicken breasts--skin on and bone-in. I had to remove the skins, trim the fat, and lightly score the meat. The meat is then rubbed with a mixture of spices and lime juice, sits for awhile, then is coated with a thick layer of spiced yogurt. Then into the oven until it is mostly cooked, and then under the broiler to finish. The Test Kitchen has some pretty slick tricks it calls on to ensure that this dish is quick, easy, and the meat has a few crispy charred spots as one would get cooking this dish in a traditional Tandoor clay oven, but the meat remains very tender and juicy.

The rice pilaf uses fragrant Basmati rice, and you have to rinse it numerous times to remove the surface starch. The recipe calls for 3T of butter, onions, salt & pepper, and the rice. The combination resulted in an immensely fragrant and buttery flavored rice pilaf. Yum!!

There was only one drawback to preparing this meal. So much cutting of onions! We had to set a fan in an open window to draw the fumes out. I guess you could say that this meal was so good we cried! :)
