High on Chocolate Pots de Créme
We had leftover Hot and Sour Soup for dinner tonight, since we made a doubled the recipe yesterday. But joy of joys, we made Chocolate Pots de Créme for dessert. America's Test Kitchen simplified this recipe so you don't have to bake it in a water bath. It's prepared entirely on the countertop, stovetop, and refrigerator.
Doolia did the stovetop part, and because our electric stove provides unreliable heat levels, the custard started to curdle before it got to temperature. It didn't look pretty. But the recipe says to strain it through a fine mesh strainer before pouring it into the chocolate pieces. So even though it didn't look silky smooth as we poured it into the ramekins, after cooling in the refrigerator for four hours, it didn't matter. It was smooth, melted in our mouths, and you would never know that it had curdled. And the dollop of freshly whipped whipped cream and the chocolate shavings provided such an elegant topping that no-one even noticed the slightly bumpy texture on the surface. The result was a winning dessert that we would be proud to serve to guests.
So now we're scheming to find a way to buy a gas range to replace the electric one we have now. We'll keep you posted as to how that's going.
