The Pinnacle: Maple-Glazed Pork Tenderloins
Whoa. I have never in my life had a meal this good.
Dooley and Doolia finally got around to cooking the Pork Tenderloins. I had to check the expiration date on the meat, we'd had it in the fridge for so long. Fortunately, we were still 5 days shy of the sell-by date.
The Complete America's Test Kitchen TV Show Cookbook says that pork tenderloins tend to be too dry and flavorless. So they developed a Maple Glaze that holds the moisture in the meat while it roasts, and that provides a sweet and spicy glaze that compliments the mild flavor of the tenderloin.
Working together in the kitchen again, we laughed and joked about after dredging the meat in a cornstarch mixture, how patting it to remove the excess cornstarch reminded us of patting a baby's behind.
The tenderloins then went into a skillet to brown, before glazing and roasting. The glaze is simply real maple syrup, molasses, and spices. You reduce the glaze once the tenderloins are browned, and brush it on. You remove the tenderloins a couple times during roasting to brush on more glaze, and then a final coat when it comes out of the oven. Dooley made mashed potatoes (skins on) in the meanwhile.
When it was time to carve the tenderloins, oh my, they were tender and juicy. Our oldest daughter is in the midst of orthodontia treatment, and was afraid she wouldn't be able to eat the meat. It was so tender that she was able to eat a full serving. Our youngest didn't like the glaze, but she loved the meat anyway. She just cut off the glazed edges and fed those to the dog. (Lucky dog!)
Believe it or not, our family of four literally ate like kings for a mere $15. A superb dinner. AND we have left-overs--yay!!!
