Tomato Tart
Dooley is under the weather today so I decided to make a dish he was not very enthusiastic about, Tomato Tart. It's basically a pizza made from puff pastry. You have to thaw the frozen puff pastry overnight in the refrigerator. Then unfold it carefully, fold over the edges to make an edge so the filling doesn't slop over the side. You brush it with egg and sprinkle Parmesan cheese over it and pre-bake the crust. Then you put the mozzarella cheese and plank the tomato slices, and bake it again. Finally, just before serving, you sprinkle it with fresh cut basil. It was light, flaky, and delicious! Too bad Dooley couldn't have any!
