Tortilla Soup
It's a cold, blustery, rainy day, so we decided to make something that would warm us up on the inside. The ATK cookbook says that this soup takes only one hour to prepare. It took us only slightly longer, as our chicken meat was frozen solid. Defrosting added 10 minutes to the prep time. But hey, it was worth it.
To make this soup, we poached the chicken with white onion, and whole peeled garlic cloves in chicken broth. The result is a wonderfully flavorful broth, and tender chicken, which gets shredded. Now that just sounds like chicken soup, doesn't it? What makes this Tex-Mex is that you the addition of a stewed puree of chipotle peppers in adobo sauce, ripe tomatoes, a Jalapeno pepper, with cilantro, onions and garlic.
It is served with freshly roasted tortilla strips, and is spicy, savory, and wholesomely filling. As we ate together, one after the other of us wiped our noses with our paper napkins, and coughed from the spiciness. A very satisfying supper. And I get to take left-overs to work tomorrow :)
