greek salad with creamy feta dressing

light meals | Feta cheese and buttermilk combine in this creamy yet tangy dressing. If you can find reduced-fat feta, use it.
Ingredients 1/2 cup buttermilk
1/2 cup fat-free sour cream
2 tsp red wine vinegar
1/4 tsp dried oregano
1/4 tsp table salt
1/8 tsp garlic powder
1/8 tsp black pepper
1/2 cup feta cheese, crumbled
1 medium scallion(s), minced
1 head romaine lettuce, cut or torn into bite-size pieces
2 medium tomato(es), cored and cut into wedges
1 medium bell pepper(s), seeded and cut into strips
1 large cucumber(s), peeled, halved lengthwise and sliced
1/4 cup red onion(s)
16 medium olive(s), pitted
Instructions
To prepare the dressing, in a small bowl, whisk buttermilk, sour cream, vinegar, oregano, salt, garlic powder and pepper; stir in feta cheese and scallion. On 4 plates, arrange lettuce, tomatoes, bell pepper, cucumber, onion and olives. Serve the salads with dressing on the side.

Great news, Deb shared with me today, that it looked like i was losing. I'm soo soo glad to hear that. I have not been on the scale, i'm just trying to do it this way and see where it takes me .

I'm b...aaaaack !!! Ok, so maybe this is the best time for me to login (ie before going to bed).
As far as losing weight goes, let me tell you this... my son was packing for Ecuador and he wanted to weigh his bag. I weighed myself before handing him the scale .... I couldn't believe I had LOST 3-4 pounds !!!! (I had to double check). I lost this just by keeping track of what I put in my mouth.
Bad news is this .... I bought those nice iced sugar cookies from Sams Club for the waterpolo girls, but then learned they had so much food that it wasn't needed. Just what???? Took them home and pigged out like nobody's business, eating one right after another. MORAL OF THE STORY: NEVER BRING QUANTITIES OF JUNK FOOD INTO YOUR HOME CAUSE IT'S TOO HARD TO RESIST. For the next 4+ days I ate like there was no tomorrow. SO .... I think I've now regained those 3-4 pounds.
But, Now ... I am back on track.
Thursday 4/6 I ate:
1/2 whole wheat bagel + cream cheese
1 small bag Kellogg chewy fruit snacks
2 saltines
1 cup coffee with creamer
1 turkey & cheese sandwich on whole wheat (no mayo)
1.5 cup spaghetti
1 slice Texas toast
1 tangerine
45 minute walk ... got to love this weather !!!!
PS - Denise, that is a really good feta cheese salad recipe. (And, yes, Denise, I can see you have lost weight). Until tomorrow!!!!

Hi everyone,
Today is Friday, my weigh in day. I lost 1 pound. So I am up to 3 pounds off. I know it is slow, but steady. I am trying so hard. I am writing everything down that I eat. I haven't done that before. I am also drinking the water. I have this weekend off, so maybe I can do some exercise. I will try. Have a great weekend.
