Roasted Chicken and Bow Tie Pasta Salad


Use rotisserie chicken from the deli to cut preparation time on this recipe. Make this the night before for a portable lunch.

3 cups uncooked farfalle (bow tie pasta) (about 8 ounces)
1/3 cup fresh orange juice
1/4 cup fresh lemon juice
2 tablespoons extravirgin olive oil
1 tablespoon stone-ground mustard
2 teaspoons sugar
1 1/4 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 1/2 teaspoons rice vinegar
2 cups shredded cooked chicken breast (about 2 breasts)
1 1/2 cups seedless red grapes, halved
1 cup thin diagonally cut celery
1/3 cup finely chopped red onion
1/3 cup coarsely chopped walnuts, toasted
3 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley

Cook pasta according to package directions, omitting salt and fat; drain. Cool completely.
Combine orange juice and the next 7 ingredients (orange juice through rice vinegar) in a large bowl, stirring with a whisk to combine. Add pasta, chicken, grapes, celery, red onion, walnuts, chives, and parsley; toss gently to combine.

Yield: 6 servings (serving size: about 1 2/3 cups)

Heidi are you out there.
I weighted in on friday ... lets just start out talking about friday my son had a accident with a car and a tree and a deer.everyone is ok except my car. so after that accident i was off track, i didn't even think about the scale until the night. and i was up about 3 lbs. In 1 Week .. OMG. This weekend i had Ribs Chicken Pot Salad, all kinds of things. The struggle continues. Good News. My dad wanted a excercise bike for the house. And it will be at his house next week ( the sales man was kinda fione too).

So i will be haning out over there riding the bike. : )

Hi Everyone,
Today is June 1st. Let's give ourselves a fresh start. It is a new month and we can restart our weight loss journey! I am personally going to try to work out more and drink the water. I might not count points religiously. I want and need to lose weight. I have to try a new approach. Try setting some goals for yourself.

It's weigh in day. Up 1.8 lbs. Yuck. I need to get my act together so the scale will quit going up and up.

Yes, i did and i was down to 327.4 ....I have no idea how that happened. I can't believe i keep posting my weight. But if that is going to get me moving than, i will keep posting.
